Dry red chilies

Here in India most curries have dry chilies as one of the ingredients
. The curry paste consists of several ingredients such as coriander, cumin, pepper, garlic, onion, turmeric, coconut and a bit of turmeric. This curry paste that we call masala is used for making fish and vegetable curries. We have a different recipe for curry paste for eggs, chicken and pork. Some dishes can be made from masala powder that we can buy.
I normally get the paste ground in the grinding stone The maid does a good job of it. We also have a blender but that does not turn out as good as if the ingredients are ground in the grinding stone

I somtimes make curry chicken with potatoes, but no dry chilies in it.

In chicken, and pork curries we do use spices but not herbs

@allknowing They’re ground into grains. I wouldn’t call it powder.
