Broiled pompano for Good Friday lunch

We skipped breakfast today as part of our Good Friday fasting, abstinence and penance. By 11 a.m. my stomach was already growling, so I took the liberty of cooking rice so it can be served at noontime along with the broiled pompano that my husband promised to make. We haven't had broiled fish in a long time. Husband was supposed to fry the pompano but he got a little lazy because of the horrible summer heat, so he thought to put the cuts into the oven instead. Then he made a special sauce with tomatoes, onions and green chiles and drizzled them all over the broiled pompano. Yummy! My husband is skipping dinner as part of his penance. Daughter and I will have a simple and light supper before bedtime.

Some of my friends in the US get pompano from the supermarket or fish market. It's probably not popular in your area or it comes with a different name. It's kinda round in shape and quite fleshy.

It's one of my favorite fish. It's quite pricey here so we don't often have it. But I heard it's cheaper in the U.S.
