Brinjal is also known as Aubergine (French) and Eggplant.
It is eaten in many countries.

That is a new information for me. Many Health scriptures especially Ayurvedic ones suggest not eating Baingan (Brinjal) during Monsoon season as its digestion happens very slowly.
My favorite is "baingan Ka Bharta" (Mashed up eggplant with added Onions and Peas).
The peas enhance its flavors.
Of Course, Potato - Brinjal and Brinjal's Fritters (Pakode) are also something that I relish a lot.
