My youngest daughter is sick again, so I'm trying my best to feed her foods that are soothing and medicinal as well.
Tonight, I'll be making chicken tinola for dinner. Tinola is our most popular version of chicken soup. We sauté the aromatics (ginger, garlic, onions) in oil, then sear the chicken meat, then add enough water to cover everything, and simmer for about an hour. Salt, fish sauce, and peppercorns are used to flavor the broth. When the chicken is tender, we throw in chopped pieces of chayote or green papaya, lemongrass (optional), and chili leaves or moringai leaves.
This chicken soup is packed with nutrients + amino acids that can help a sick person recover from illness. I pray that my daughter gets better over the weekend.
What's your favorite version of chicken soup?

I hope your daughter feels better soon. I can no longer cook; so I haven't made any chicken soup. Have a good weekend.

I love having chicken soup. My mom makes it with less spices, tasty chicken broth and she adds some vegetables and there goes pepper, salt and mixed herbs. Its tasty and its better than all the chicken soups I have tried in restaurants.

Homemade chicken soup is always better, IMO. I also like our version of chicken noodle soup.
