Delicious bitter gourd

Bitter gourd is no doubt bitter but it can be transformed into something tasty and palatable There are many ways of doing it and one is to stuff them and fry them. When they are fried the bittrness disappears And then there is that dish we normally make. Slice the gourd fine and marinate it in salt for half an hour Squeeze out the water and this way the bittierness to some extent disappears Cook it in masala, add jaggery and temper it with caramelized garlic and mustard - delicious dish is ready. I know that eating bitter gourd is healthy but I do not like to eat it.
