Pick Up a Side Job or Switch Jobs Entierly

I consider it such a blessing that I have been able to work and take care of my kids flexibly working as a home health aid for my mom. Recently we got our review done and my hours are going to be cut down for almost a week and a half until a decision is made on our appeal date in December. I don't know if it will be permanent or if the appeal will go in my favor and get me back to my regularly scheduled hours. If it is permanent then I am going to either have to find a way to get some extra money to supplement my current home health aid job or switch to another job and try to get the pay to as close to what I make now as possible. Very big possibility that I may go back to dental assisting, but I definitely won't be able to make much more than a newby because my year and a half of experience is from years ago pre pandemic.
I need to refresh my memory on my knowledge so I will be hitting the books again. It looks like the job pay has gone up since I last assisted however no where near what a living wage would actually be in today's economy. I would love to get higher credentials in order to get way better pay but it will take minimum 3 years I believe and that is without considering the tuition cost. I would love to be able to go out and work and make enough money to get by and have something left over to save.
The other thing to consider would be what jobs could i possibly get on the side that would work for me time wise with my kids in school and my hours with my mom should I choose to keep my current job and do something else to supplement it. I get anxious at the thought of lyft and uber because i do not trust society enough. Door dash and uber eats i could consider but my boyfriend's hours make child care a little difficult to get any worth while time to make money. I can't drive around with my kids for hours doing food delivery apps and I really believe it really takes dedicating some solid time to these jobs in order to make the money worthwhile.
This issue has me so very anxious and shook about the changes i may very well have to make in the very near but not near enough future and the pay cut will be so annoying.
Any experience with any of these ideas I have? Any suggestions?

Thank you I appreciate it. If it were just me I'd be ok falling down and starting over but I have 2 kids who depend on me and I'd rather not have to go to anyone else for help.
