Yesterday, we went grocery shopping, and I decided that this week I want to eat more vegetables because lately we’ve been eating mostly meat. It’s also better for my mom since she’s a senior and has a harder time chewing. Today, I’m planning to cook chop suey, tomorrow pakbet, and the next day sautéed vegetables. I’m excited to eat healthier and include more veggies in our meals! What do you plan to cook for your meals this week?

I hear you! Even adding a little more here and there is a good start.

Looks like a really thoughtful and healthy plan. Adding more vegetables is a great idea, especially if meals have been heavy on meat lately. Fibre content is really good for guts. It is also really considerate of you to think about what’s easier for your mom to eat. Chop suey is a great choice because it’s filling but still light. Pakbet is always comforting and packed with nutrients. Sautéed vegetables are simple but so satisfying when seasoned well. All these are great choices. I love how you’re planning ahead instead of deciding day by day. This kind of meal planning makes healthy eating much easier to stick to. It sounds like a delicious and nourishing week ahead for both of you. For me, I will cooking light but yes with most veggies.Enjoy the time!

That makes sense. As long as it keeps you going, that's what matters.
