Trying out some Czech cookery

My friend’s partner is Czech, and when I was at their house recently we were sorting a few things and I started leafing through a book of Czech and Slovenian cookery. There were some interesting things in there and she said she had never tried very many of them so I was tempted to give it a go. The first recipe I tried was this fruit cake called ‘Bublanina’. You won’t be surprised to hear that I made it with jostaberries from the freezer. The result was excellent. It uses a lot of eggs which are beaten with icing sugar, so I guess that is the secret to making it so light and fluffy. The only difficulty is not eating too much of it! At the same time I also made a gluten-free version, exactly the same as the other but using supermarket gluten-free plain flour and baking powder, and that worked out really well as well - in fact we could barely tell the difference between them. As usual I ate most of it before thinking of taking a photo but in fact it did turn out looking just like the picture! All rights reserved. © Text copyright Fleur 2026.

Can I ask how many eggs and how much icing sugar And it should be a light fluffy sponge because that is what i want to make My sponges are never light and fluffy and ai do wonder what I am doing wrong

@Ineeddentures Good luck. Do you have an electric beater? It's a lot of whisking otherwise. Also I didn't have any vanilla sugar, I just used a teaspoon of vanilla extract.

The Recipe sounds interesting and tasty. Of course, not very healthy. May be the next time, you could enjoy it with some friends as well !

I’ve only eaten Czech food in Hungary and wasn’t very impressed. However, that cake sounds delicious and not too sweet.
