Yellow fin tuna in coconut milk

Our dear @AmbiePam posted something about food cravings. I told her that yesterday I had a mad craving for yellow fin tuna in coconut milk.
I'm glad I found some fresh tuna cuts at the wet market that same day.
This is a common dish in the SE Asia but recipes vary across the region. Here's how I make mine:
Place the tuna cuts and slices in a deep pan. (I had about 5 square palm-size cuts.) Pour half a cup of white vinegar, 1/4 cup water, and 1/4 cup fish sauce. Throw in some cloves of garlic, slices of ginger, chopped onions, chopped tomatoes, 1-2 dried bay leaves, cracked/whole peppercorns, and finger chilis (green). Simmer on medium to high heat. When the fish is nearly cooked, pour coconut milk and let simmer for a while. Then add pechay leaves. Salt and sugar to taste.
I can have this dish any day! We normally eat this with rice.
Also, I cooked everything without the lid on. You can cover the pot once the dish is cooked and done. Some recipes may add lemongrass and curry.

Quite right.
The difference is that Bicol Express uses pork/chicken and shrimp paste.

@almostoveryou yes! and if someone prefer tuna over meat then they can cooked as well. There's even a canned tuna here that is a bicol express.
