Dinners for the week

Now that summer vacation is here, that means cooking more. My husband and son have loved benefiting from my cooking more. I usually buy frozen stuff that I can easily throw in the oven or make something easy during the work week. Now that I've got more time, I actually cook. Monday, I made bow tie pasta with a combination of jarred and homemade sauce made with Italian pork chops. It was a hit. Tuesday was BBQ pork tacos. Wednesday was pizza casserole. Today I'll be using the kielbasa and doing a version of the pasta I made Monday. Tomorrow the plan is Sloppy Joes. I also have stuff for beef enchiladas, steak, and spaghetti. Now that I'm not working, though, I have to make food stretch, which unfortunately means a lot of pasta. I also use pork a lot because it's cheaper than other meats. My son loves pasta, and it's super filling to help fill a teenage boy's belly. I am also able to easily use it as leftovers for my husband's lunch. I also buy a lot of in-season fruits and vegetables for my son to snack on. I am not a cook who uses measurements, and I just kind of eyeball a lot of stuff. My son's favorite meals I make are typically burrito bowls, enchiladas, spaghetti, and chicken wraps. I've been trying to mix some things up a bit, though, and have been looking for inspiration from other places. I almost never completely use other people's recipes, but I will use them for inspiration and take what they did and make it my own. I saw a video where someone made a McGriddle casserole, and it looked good, so I may be trying that soon.

Yes, a lot of people make a lot of pasta dishes because pasta is so cheap. If only healthier things were that cheap. I absolutely love pasta dishes.

I love them too, but they really aren't the healthiest, but when you're trying to stretch a dollar, you do what you can. My husband and son aren't super picky, though, so that helps. My son used to be really picky, which made making dinner more difficult, but as he has gotten older, he has gotten a lot less picky. My son used to hate pizza, which took a lot of simple dinners out of the rotation. Now he loves it and will eat most things I give him, if there are things in it he doesn't like, he'll pick around them.

It’s great to be able to take a recipe and make it your own…..lots of pasta dishes are quick and easy and cheap to make ….hopefully you can continue to do that.

Thanks, I'm hoping to keep the grocery budget low. We use Aldi to shop for a lot of things to help keep the cost down. I will say pasta and rice tend to go the furthest when it comes to keeping the cost down.

Sounds like me but it is always hit and miss because I do not want to fuss for myself, Bought some frozen bean and cheese burritos and they can stay frozen if needed, I made one and talk about no taste, I usually gtet lucky with chicken, meaballs, and pork sausage patties those kinds of frozen stuff and fries and tater tots,

I have to feed my husband and son; otherwise, I probably wouldn't bother to cook this much, even in the summer. It's just more cost effective to feed a family when you cook. Pasta and rice can go a long way. I have never learned how to make a small amount of pasta for just myself, and I'm not a leftover fan. I am picky about which frozen things I'll eat. I actually like most bean and chees burritos. I tend to add cheese, onion, and sour cream to them to give them some extra flavor.
