Toasted pork adobo, eggs and rice for breakfast

Good morning! There was a heavy downpour earlier and I couldn't be happier. I love the rainy season. Our wi-fi has been restored as well. It came back last night at 8 p.m. I wasn't expecting anything yesterday, honestly. But then a few people in our apartment group chat said that Internet's been fixed. So, hurray. I no longer need to use my personal hotspot. I'm now preparing breakfast for me and my daughters. I initially thought of making soup but I'm not in the mood for a lot of chopping. Then I saw the leftover pork adobo in the fridge. Ah, yes, let's make adobo tostado with eggs and rice. . I'm currently reducing the adobo sauce and will be frying the meat to a crisp. I'll probably have it with pickled ampalaya (bitter gourd) on the side. What's been cooking in your kitchen?

What's in your burritos? I miss having that. We can get from here but they're not as Tex-Mex in terms of portion and flavors.

It's great to know you have wi-fi. We have it, too, but in only one room. I hope you enjoyed your breakfast. I and my whole family has been completely vegetarian for generations. I eat only once a day. No breakfast, no lunch. Just a cup of tea early in the morning and then a little dinner at night. That's enough to keep me alive. And I'm fit.

I tried to be vegetarian in high school but was advised to eat some red meat because I have anemia. I know a few people who are on OMAD (One Meal A Day). When and why did you start eating only once a day?
