Looking for Cookie Recipes!!! Help.

Hello, I am looking for different cookie recipes. Please post them here for all of us to enjoy. There is one I want, I used to have a recipe for an Icelandic cookie. It had a simple cooikie recipe, you rolled it out and cut circles then placed jam on the circles and folded it and crimped the edges. Anyone here have a recipe from Iceland like that? Please post any recipes or ask for a recipe you want. I think this could be fun!!!

Sugar Cookies 1 cup butter, softened 1 tsp vanilla 1 cup sugar 2 tsp baking powder 1 egg 3 cups flour Preheat oven to 400o. In a large bowl, cream butter & sugar with electric mixer. Beat in egg & vanilla. Add baking powder & flour one cup at a time, mixing after each addition. The dough will be very stiff, blend last flour in by hand. Do not chill dough. Divide dough into 2 balls. On a floured surface, roll each ball in a circle approx. 12” in diameter & 1/8” thick. Dip cutters into flour before each use. Bake cookies on ungreased cookie sheet on middle rack for 6-10 minutes.

GRANDMA YEARS' SOFT MOLASSES COOKIES 1/3 c. shortening 1 c. sugar 1 1/2 c. molasses 2/3 c. water 7 c. flour 1 tsp. cinnamon 1 tsp. salt 1 tsp. allspice 1 tsp. ginger 1 tsp. cloves 2 tsp. baking soda Mix shortening, sugar, molasses and water thoroughly. Blend all dry ingredients together and add to molasses mixture. Chill. Roll and cut in desired shape. Brush with milk and sprinkle with sugar or bake plain and frost after cooled. Bake at 350 degrees for 10 to 12 minutes. PEANUT BUTTER BALLS (Buckeyes) 1 1/3 sticks margarine 1 c. peanut butter 1 lb. powdered sugar 6 oz. chocolate chips 1/5 bar paraffin Combine margarine, peanut butter and sugar. Melt chocolate and paraffin in top of a double boiler pan. Roll peanut butter mixture into 1 inch balls. Dip into chocolate with a toothpick or fork, leaving top of the ball exposed. Place on waxed paper until set. Smooth fork hole with finger. CANDY CANE COOKIES 1/2 c. butter 1 c. sugar 1 tsp. vanilla extract 1/2 tsp. peppermint extract 3/4 tsp. red food coloring 1/2 c. shortening 1 egg 1 tsp. salt 2 1/2 c. flour Mix butter and shortening. Cream together with sugar. Add egg and other ingredients. Spoon onto cookie sheet. Bake at 375 degrees for 8 to 10 minutes. --TOPPING:-- 1/2 c. sugar 1/2 c. crushed peppermint Stick candy

I haven't been able to find that recipe. It was from Iceland and I had gotten it from my ex-husbands mom. His uncle married a lady from Iceland and it was a recipe she brought with her.
