I actually make like normal lasagna but i put lots of mushrooms and ricotta cheese. It's sooo yummy. If you have never tried it, you must do so.

I just take your normal, traditional lasagna recipe and substitute cream cheese for the ricotta. It comes out so smooth, rich and creamy! You'll get rave reviews!

Pork Loin Stuffed with Spinach INGREDIENTS: 1/2 (10 ounce) package frozen chopped spinach, thawed and drained 3 tablespoons margarine 1/2 cup diced onion 1 clove garlic 1/3 cup dry bread crumbs 3 pounds pork tenderloin 2 tablespoons ketchup 1/4 cup orange juice 2 tablespoons teriyaki sauce 1/2 teaspoon ground cumin ------------------------------... DIRECTIONS: Preheat oven to 350 degrees F (175 degrees C). Saute spinach, butter, onions and garlic over medium heat until soft. Add bread crumbs. Cut tenderloin in half lengthwise. Stuff with spinach mixture and secure with kitchen twine. In a bowl, mix ketchup, orange juice and teriyaki sauce. Baste tenderloin with 1/2 of the mixture. Sprinkle pork with cumin. Place in shallow roaster and bake at 350 degrees uncovered for one hour. Baste with reserved marinade and cook one more hour covered. Use meat thermometer to check for doneness. Thermometer should read 160 to 170 degrees F (71 to 77 degrees C)

Italian Lasagna INGREDIENTS 9 thick slices bacon, diced 1 onion, chopped 1 teaspoon fennel seed 1 teaspoon dried oregano 1 1/2 teaspoons Italian seasoning 2 (28 ounce) cans tomato sauce 2 pounds Italian sausage 1 (16 ounce) package lasagna noodles 2 pints part-skim ricotta cheese 2 eggs 2 teaspoons chopped fresh parsley 1 teaspoon dried oregano 1/3 cup milk 8 slices provolone cheese 6 cups shredded mozzarella cheese DIRECTIONS Brown bacon and onion in a large pan over medium heat. Stir in fennel seed, 1 teaspoon oregano, Italian seasoning, and tomato sauce. Cover, and simmer on low for 4 to 6 hours, or until thick. Brown sausage links in a large skillet. Drain on paper towels. Cut into 1 inch pieces. Mix together ricotta cheese, egg, milk, parsley, and 1 teaspoon oregano in a medium bowl. Layer 1 cup of sauce on the bottom of a 9 x 13 inch pan. Layer with 1/3 uncooked lasagna noodles, 1/2 ricotta cheese mixture, 1/2 sausage pieces, 1/3 mozzarella, and 1/2 provolone cheese. Top with 1/3 sauce. Repeat layers. Top with remaining 1/3 noodles. Spread remaining sauce over the top, and sprinkle with remaining 1/3 mozzarella cheese. Bake at 350 degrees F (175 degrees C) for 1 1/2 hours.

This is the lasagna I tend to make occasionally. I don't lasagna all to often as I find the ingredients to get rather costly after a while. I make my lasagna in a crock pot though instead of in the oven. I included the recipe below that I had found, as well as use in-case you are interested. Thanks for allowing me to share. "Lasagna." Ingredients are as follows: - 1 lb. of ground beef - 1/2 cup of onions, diced - 4 ounces of cream cheese, softened - 1 (16 ounce) jar of spaghetti sauce - 4 ounces of sour cream - 1 1/2 cups of mozzarella cheese, shredded though - 1 (12 ounce) package of wide egg noodles, uncooked - 1 1/2 cups of cheddar cheese, shredded Directions are as follows: - Brown the beef with the onion until know longer pink. Then drain. - Then add the spaghetti sauce, the cream cheese, as well as the sour cream & then mix it well. - Then spray a 5 quart crock pot with PAM! Then layer in the crock pot the noodles, & the beef mixture as well as all of the cheese's. Then repeat the layers as necessary at least until cooker is full. - I then cook & cover it on high for about 2 hours. Then I reduce the heat to low for an additional four hours. Thanks for allowing me to share with you what type of lasagna I make in my crock pot occasionally. I'd love to hear your recipe that you have. xx

Lasagna East Recipe: 8 ounces lasagna noodles 1 pound lean ground beef 1/2 cup chopped onion 8 ounces mushroom (optional) 1 jar (about 6 ounces) spaghetti sauce 1 teaspoon garlic powder 1/2 teaspoon salt 1 teaspoon dried leaf oregano, crumbled 1/2 teaspoon dried leaf basil, crumbled 1 1/2 ricotta cheese 2 cups shredded Monterey Jack Cheese 3/4 cup grated parmesan cheese Cook lasagna noodles according to package directions; drain and set aside. In a large skillet, brown beef, onion and mushrooms; drain well. Stir in spaghetti sauce, garlic powder, salt, oregano and basil. In a 2-quart butterd baking dish (about 11x7x2-inches), layer 1/3 of the lasagna noodles, 1/3 of the sauce and 1/3 of the ricotta cheese, Monterey Jack cheese, and parmesan cheeses. Repeat layers twice. Bake lasagna for 30 minutes, or until thoroughly heated and bubbly. Let stand for 8 to 10 minutes before cutting and serving. Serves 6 to 8.

I love lasagna, but I use chicken (or turkey at Xmas) just to give it a different taste and it's a great way to use left over chicken.
