Vegetarian Recipes - Does anyone have any good Vegetarian recipes? I know

someone has a recipe discussion open - but I would like this one to be solely for vegetarian and vegan recipes. I especially like Indian, and Thai food... but I will leave it open to all differnt types of vegi food!

Here's one of my absolute favourite Indian Dal recipies & it comes from a very old cookery book I've got. It goes like this: 6oz yellow split peas 1 large onion 2 tbsp oil 1 clove garlic, crushed 1 tsp turmeric 1 tsp ground ginger 1 bayleaf 1 litre water 1 lemon sea salt freshly ground black pepper Soak the split peas with water for a few hours covered then drain & rinse them. Peel & chop the onion and fry it in the oil in a large saucepan for 5 mins, then add the garlic, turmeric, ginger and bayleaf and fry for a further 5 minutes. Stir in the split peas and the water. Bring the mixture up to the biol, then let it simmer gently, with a lid on the saucepan, for about 30 minutes, or unil the split peas are soft. Remove the bayleaf and liquidise the soup ( I prefer to roughly mash it, so that it has some texture to it, also saves on the washing up!!!). Wash the lemon then cut 4 or 5 circles from it to garnish each bowl of soup. Squeeze the rest of the lemon and add enough of the juice to the soup to sharpen it. Season carefully with sea salt and freshly ground black pepper. Reheat the soup and serve. (Serves 4-5.) Enjoy! LOL

Right...this one's really basic and very indian! If you like brinjals/eggplants, buy the small elongated variety. Cut into pieces and drop in water to keep from turning brown. In a pan, take 2-3 tbsp of oil, throw in a 1/2 tsp of mustard seeds. when they splutter, add asafoetida (a pinch), 1/2 tsp turmeric powder and 1/2 tsp chilli powder. You can increase the chilli powder if you like it spicy. Add some ginger garlic paste (alternatively can used finely chopped ginger and garlic. Throw in teh brinjals and cook till done. They will almost start to get crispy. Stir constantly to ensure they dont burn. This is so simple, but it tastes divine!!! Happy cooking!

Thank you for the recipe. I don't like eggplant...but my boyfriend does so perhaps I will make it for him. Can you subsitute the eggplant for something else?

I find a ton of recipes at www.vegsource.com and www.vegweb.com that I really like. I don't want to copy and paste a bunch of recipes! But Mmm... there are so many good ones there!
