In my sojourns to the capital, Bangkok, it has been quite fascinating whenever we had Thai food on the side streets. The price, the ambiance, the noise around you and the unmindful, very courteous Thai people really add up to the great experience of eating in Thailand. Fancy restaurants does not appeal to me more than those that are available right by the road. They just do not compare with those served in restaurants.
In HK, when I used to live there, my friend and I used to spend weekends trying to find the best Thai restaurant in the various districts of HK and Kowloon. Had great times eating and savouring real authentic Thai food outside of Thailand. Sure it is pricey, but that is only once a week, alternating with Indian and Malay food.

There are 4 major regions in Thailand, Central which is based in Bangkok. The Northern which is up north with many cities with the most famous one as ChiengMai. The NorthEast region, which is roughly Nakorn Rajsima, and Khon Kaen.
The Southern Region is based in the south and major cities as HadYai, Yala, Phuket and Surajthani.
The food from each of the region are unique and they are all good. Have you ever taste those food beside the one from Bangkok?

You really know your place well and you seem to have travelled a lot in the past ah? Nice to hear suggestions and info from a real traveller like you. Maybe you could post some nice photos of the place you have visited. I will try to do that here, but I don't have snapshots of Bangkok because whenever I am there, I am on a business trip. Show us some really nice pics of the markets on the river and food stalls along the streets.

Thai food oh yes, I love it since I am Thai lol. The only problem with Thai food overseas in the US and in London; they are EXPENSIVE. In the past 20 or so years ago, it was very difficult to get authentic ingredients. Nowaday you can get anything for to make Thai food but the prices are still TOO HIGH. However Thai food is very popular here in the US and has been for the last 10 years or so.
In Thailand, I would prefer to eat food from a place where I can see that there is protective glass case and cold refrigerator to store the raw food. My system is so westernize and I have to be careful of what I eat. I remember when I was young, we love to go out even late at night and we would eat food that were cooked and sold in the open market.
What dishes are your favorite? Mine are Tom Yum Kung, Pad Thai, Todd Mun, Masamun Curry, and Sateh.
