Interesting ideas for Smoked Turkey

The first thing I do now is pour a good quality Italian Salad Dressing into the chest cavity after putting it in the smoker, it's a lot easier to do it when you don't have to be concerned about spilling any of it out. This keeps the breast meat from getting dried out while smoking. Do not be concerned about it looking pink when you take it out, trust your meat thermometer, if my memory serves me well that should be about 170 degrees Fahrenheit, but be safe and check it out yourself. My favorite Italian Dressing is Wishbone brand. You will probably need about one pint for a full size turkey.
The smoker that I use is a Weber charcoal that is round. It takes about 8 hours to smoke a whole turkey in it.
