Veggie Soup Tip!

I made veggie soup today and I didn't have any beef broth. I did have a can of french onion soup so I added that instead. This soup is amazing. You have to try this. I can't stop eating it and the vegetables aren't even tender yet.

That sounds like it might be good. Now that the weather is colder here, I will start to think more about soup. I have never made homemade soup. Do you have any recipes that you would like to share?

My soup is done and it is amazing. This is how I made it. Leftover spaghetti sauce with ground beef 2 cans of vegall 2 chopped carrots 2 chopped potatoes 1 can of french onion soup 2 stalks of chopped celery Just throw it all in and cook it on low for the day. So good!

Thanks, that doesn't sound too hard, but I have one question, what is vegall? And where would I look for it?

Veg-All is a canned good product. It has carrots, potatoes, green beans, and corn all in one can. Great filler for soups.

I have used the french onion soup many times to make my base. It adds a lot of flavor to it. I love it.

Grilled Vegetable Soup (Emeril) Yield: 4 servings 1/4 lb zucchini, cut into 1/2-inch : lengthwise slices 1/4 lb yellow squash, cut into 1/2 -inch -- lengthwise slices 1 sm red onion, cut into -- 1/2 -inch slices 1/4 lb shiitake mushrooms, -- stems : removed 1/4 lb red pepper, -- quartered and : seeded 1/4 c olive oil : Salt and pepper Preheat the grill. Toss all the vegetables in the olive oil and season. Carefully grill all the vegetables making sure to get grill marks (that's where the flavor is). Set aside to cool. When cool enough, cut all into uniform small dice. Add to the soup base and adjust the seasonings.
