I bet many of you have eaten chinese cruisine before...like the famous gong pao chicken but i would like to introduce you all to another dish called... Yang Zhou Fried Rice...the really traditional and original yang zhou fried rice smells great...taste superb and looks heavenly...there's a layer of egg over every grain of rice...every mouthful...one would taste the fragrance of the egg...the rice is very chewy but not too hard and not too soft...this dish does not have many ingredients...mostly rice and egg but it's not an easy dish...it test the skill of the chef...and arm strength as well to all who are interested...this is the recipie and how to prepare it...though i am no expert in cooking but my cooking taste rather nice too and this dish is the 1st dish i learn, from my aunt who's an expert in cooking this dish the ingredients are garlic, onion, vegetable oil, cooked rice, egg, shrimps and garnish to your own delight... the seasoning are dark soya sauce, light soya sauce, pepper, salt... First and most importantly, you have to prepare the cooked rice...the secret to this yummy dish is cooking the rice with chicken soup...well...you have to wash the desire amount of rice well. the simple way: -buy chicken essence block from any supermarket -disssolved the chicken essence block in sufficient water to cook the desirable amount of rice -add the dissolved chicken essence to washed rice and cook in a pot the "do it yourself" way: -best buy fresh chicken (frosted chicken will do too) -(defrosted) and wash chicken well -add sufficient water to cooking pot and add in the whole chicken -use a "big" flame until water boils -change to "median" flame and cook for 30 minutes -then change to "small" flame and boil for another 30 minutes -the chicken soup will have a lot of oil..skimp away the oil from the top of the pot with a spoon -add sufficient chicken soup to washed rice and cook in a pot Preparation of egg: -about 2 eggs to 1 bowl of rice -crack eggs into a big bowl -beat in one direction, either clockwise or anti-clocwise -add a little dark soya sauce and a little pepper -mix well Preparation of shrimp: -shelled the shrimps -picked the intestines from the curve-up part of the shrimp with a toothpick -marinate with a little light soya sauce and pepper for 15 minutes Preparation of garlic and onion: -tear away the "skin"/outer-layer of the garlic and onion -chopped them into fine pieces now you are all ready to cook the dish -add and heat a little vegetable oil to a wide pan -add in finely chopped garlic and onion -fry until golden brown (there will be an aroma) -add in cooked rice, stir well -then add in egg mixture, in quick motion, stir and mix the rice and the egg well (best, until every grain of the rice is coated ewith a layer of egg mixture) -when the egg is half-cooked (a little watery, not yet harden), flipped the rice over and over again in the wide pan until egg seems cooked -add in the marinated shrimps and stir -fry for another 2-3 minutes until shrimps turns a lovely red colour -add seasoning to your own taste but not too much or it will cover the original taste of the fried rice your fried rice is done...garnish to your own delight... normally i will garnished with chilli and fried small onion garnish-chilli: -wash chilli -soaked chilli in ice cold water and put in the fridge for 30 minutes -chilli will split open and curl up like a "red flower" -remove the chilli seeds garnish-fried small onion: -tear away "skin"/outer-layer of small onion -cut into thin slices (can see clear circles) -add and heat vegetable oil in a pan -add in sliced onion pieces and fry util golden brown -gently press the fried onion slices in between papers to absorbed away extra oil my way is to add the fried small onion slices on top of the fried rice and add garnich with "chilli flower" around the edge of the plate when you eat, mix the fried small onion slices with the fried rice, it makes the fried rice taste even better, if you prefer hot, you may want to slice some chilli and eat together with rice. ya...a little...but do try it...you will not regret it...or if you want an easy way out, you don't have to cook the rice with chicken soup, the fried rice will taste good too...just not as good as using chicken-soup rice to simple things out, you don't have to marinate the shrimps, shrimps taste just as nice without marinating and you can don't add any garnish, it save time too...the fried small onion slicies, you can do eithout it...
