coconut creme pie

I want to make coconut cream pie, but I don't want to make it with merangue. I want to put fresh whipped cream on top instead. Do you have a recipe for the filling? My 11 year old has asked me to make this for Christmas this year. Please help with some advise.

Coconut Creme Pie - Coconut Creme Pie
INGREDIENTS:4 eggs, lightly beaten 3/4 cup sugar 1/2 cup plain flour 1/2 tsp. baking powder 1/4 cup melted butter 2 cups milk 1-1/2 cups coconut 1 tsp. vanilla essence PREPARATION: Combine in order and mix well. Pour in greased 10 inch pie pan. Bake at 350° for 45 minutes or until brown. ````````````````````````````````````````````````````````` INGREDIENTS: 3 eggs, beaten 1-1/2 cups sugar 1/2 cup melted butter or margarine 4 teaspoons fresh lemon juice 1 teaspoon vanilla 1-1/3 cups grated coconut (or small can) pinch salt 1 unbaked pie pastry, 9-inch PREPARATION: Preheat oven to 350°. Combine eggs, sugar, butter, lemon juice, vanilla, and salt and mix very well. Stir in coconut, then pout into pie shell, Bake for 30 minutes in oven. Cover the crust edge with pie shield or use aluminium foil covering the edge. Bake for additional 10 - 15 minutes, until set. Chill thoroughly before serving or pie will be a little bit sticky if served warm. One of these might be of some help to you pookie. :)

If you need any more recipes, let me know because I do have several more from when I too was collecting and testing various ones out - many a moon ago.
