Wedge Fry Surprise

Oh wow, that was a taste surprise. Last night, I made homemade wedge fries: four Yukon potatoes sliced into 1 1/2 inch wedges fresh thyme preserved lemon rind olive oil dots of butter Baked in the oven until crispy on the outside, stirring every 20 minutes or so. Last night I made an Ailoli sauce to dip them in. Brought some to work for lunch today, and grabbed a Helliman's packet from the work fridge. Squeezed it over my fries. OOpps! Not mayo! Italian dressing? *shrugs* *tastes* OMG good! Explosion of awesomeness in my mouth. Tastes blended nicely together, with the preserved lemons gluing them together.

That sounds pretty good. I'm going to have to try this. What exactly is "preserved" lemon rind? Is it different from just grating some peel?

Preserved lemons can be used as a substitute for lemon rind. They are prominent in Indian dishes, and can be seen as a side condiment in Morroccan food. They are lemons, cut in half, and "pickled". I'll see if I can find a recipe.

That sounds pretty darn appetizing! I'll have to try it. I put a little ranch dressing in my mashed potatoes. mmm
