Some of my favorite low carb recipes

I've noticed there are quite a few people here at MyLot who are on low carb plans for either weight loss or to help conditions like Diabetes or PCOS. I've followed a pretty low carb way of eating for 6 years and thought I'd share some of my favorite low carb recipes. If you'd like to share yours that would be great! I'm always on the lookout for new recipes. Sausage and Egg "Muffins"- my thanks to Jim for this recipe! Preheat oven to 350F. Decide what kind of meat you want to use. I've used homemade turkey sausage and turkey ham and they work well but use whatever meat you prefer. If you use sausage or bacon, you'll need to par-bake the meat for about 10 minutes. I just make the sausage and press some into the bottom of each of 6 muffin tins. Pop it into the heated oven, let it cook about 10 minutes, then remove the tin and drain any grease. You can also use bacon and wind it around the side of the muffin tin cups. Again, if you use bacon you need to par-bake it. So, just press the meat into the bottom of the muffin tin cup, par-bake if needed then crack an egg onto the top of each piece of meat. Bake it until the egg is cooked to desired doneness. Be careful to not overbake these. They're great for a quick breakfast or a snack! I made 12 at a time and keep them in the fridge. Savory Green Beans This is best with fresh green beans. If you can't use fresh, it works great with frozen and really spices up canned green beans. Into a large sauce pan, put some olive oil (1 to 2 tbsp), a bit of Smart Balance and spices like marjoram and basil. Let that get warm on the stove and add chopped onion (we prefer green onion), chopped garlic,and some smoked turkey sausage or smoked turkey leg. It's best when the onion and garlic are darkly cooked so I let it cook on medium, watching it, til it's almost burned. Once the onions and garlic are dark, add green beans and stir well. When the beans are pretty well coated cover and turn the heat way down to simmer and walk off. Check it every 15 minutes or so, stirring a bit but let it cook for a long time, 2 to 4 hours. If you cook it less, the green beans are much crisper and while I normally love them crisp or even raw, when I make them this way I prefer them cooked down. Homemade Turkey or Beef Breakfast Sausage Into a mixing bowl suitable for the amount of sausage I want to make, I put some water, 1/8 to 1/4 cup. I add sage, onion powder, garlic powder, rosemary, thyme, crushed red pepper, a bit of salt and pepper until the water smells spicy. I don't use the same amount every time but I like the meat to have the flavor of sage so I use a lot of that. I mix the spices and water a bit then add the meat, working the water into it with clean hands. This helps distribute the spices more evenly than just adding them to the meat itself. Once it seems well mixed I just shape the meat into patties and pan fry it in a bit of canola oil spray or some olive oil.

hereis my fav ENERGY SALAD LIke most salads, a powerhouse of nutrients. Cooking Time : 10 min. Preparation Time : 10 min. Serves 4. Ingredients 1/2 medium cauliflower 4 dates, chopped 1 banana, sliced 1 orange, segmented 2 unpeeled red apples, cut into cubes juice of 1/2 lemon 1/2 teaspoon grated lemon rind 1/2 tablespoon oil 1/2 tablespoon vinegar salt and pepper to taste For the orange dressing 1/2 teacup thick fresh yoghurt 4 teaspoons orange juice 1/2 teaspoon mustard powder 1/2 teaspoon powdered sugar a pinch salt Method 1. For the orange dressing, mix all the ingredients very well and chill. 2. Break the cauliflower into small florests, then steam for 5 minutes. Cool. 3. Combine the oil, vinegar,salt and pepper. Marinate the cauliflower in this mixture. 4. Mix all the ingredinets in the bowl. Chill. Serve with orange dressing.

The salad sounds nice but I don't think it would be considered low carb! Each of 4 servings would contain about 32 grams carbs, minimum. When your daily diet is 30 to 50 grams, that would be waaaay too high in carbs! Thanks for the recipe, though. :)

I think this is a great discussion. I hope that more people will respond. I know that there are times when discussions can get lost in the shuffle. One of my favorite things to make is faux hashbrowns. It is really easy to make....it is made just like hashbrowns out of potatos but you would use zucchini instead. Peel and shred two zucchini. Fry in pan with small amount of butter and salt and pepper. The salt will help draw out the excess water in the zucchini. When the zucchini is completely cookd, it will be much smaler in size and will be lightly browned. When I first made this, I was not thrilled and fearful of trying it. But when I did finally take a bite, I found that it was really good and you could taste the sweetness of the zucchini. Of course, I put a little bit of ketchup on my faux hashbrowns. But do not use too much ketchup because that would defeat the purpose of being low carb. :) Also, be sure to cook it long enough to get all the water out of the veggie, because if you do not, water will run into other food on your plate. For a complete breakfast, I make this with scrambled eggs with cheese and some bacon. :) This really is a must try! Have a great breakfast!!!!

I've made faux hashbrowns with cauliflower before but hadn't tried it with the zucchini so I just made some but didn't peel it first. Not bad at all! I think I prefer the kind from cauliflower but this is a great dish, too. Thanks for sharing that. :)
