or do you just toss in what's available to create a scrumptious meatloaf? Gravy or tomato topping?

I always use ground beef. Then I put in any or all of the following, bread, oatmeal, crutons (they are the best), ketchup, mustard, onions, peppers, pancake syrup (sounds nasty but the kids eat it). Then I cook it.

I have a proper meatloaf recipe and wanna share with u and hopefully, u'll try it and will tell ur experience. INGREDIENTS: 1 pound ground beef, lean 3/4 to 1 pound ground veal 1 egg 1/2 cup fine dry bread crumbs 1 can (approx. 4 1/4 ounces) chopped ripe olives 1 can (4 ounces) chopped mild green chile pepper 1 cup corn kernels 1/2 cup salsa, plus more for topping 1 teaspoon onion powder 1/2 teaspoon garlic powder 1/8 teaspoon pepper 1/4 teaspoon salt, or to taste PREPARATION: Combine all ingredients except topping in a bowl and combine until blended. A wire potato masher works well for mixing meatloaf. Pack into a loaf pan and bake at 350° for about 1 hour and 15 minutes.

here is a variation-- Ingredients : - 500 gms. minced meat (keema) - 1 large onion (chopped) - 5-6 garlic flakes (chopped) - 100 gms. corn (canned or fresh) - 100 gms. peas (shelled) - 50 gms. capsicum (chopped) - 100 gms. carrot (chopped) - 1 tsp soya sauce - 1 tsp tomato sauce - salt and black pepper powder (to taste) For topping : - 200 gms. potatoes (boiled and mashed) - 2 tbsp butter - ½ cup milk Method : 1. In a microwave safe bowl heat 1 tbsp butter at 100% power for 30 secs. 2. Add chopped onion, garlic and microwave at 100% power for 2 mins. 3. Add remaining chopped vegetables and microwave covered at 100% power for 8-9 mins 4. Add minced meat, soya sauce, tomato sauce, salt and black pepper and microwave (covered) at 60% power for 4-5 mins. Allow to stand for 5 mins. 5. Preheat the oven at 250ºC. 6. Blend milk, potatoes, 1 tbsp butter to a smooth paste for the topping. 7. Shift the meat-vegetable mixture to a greased pie dish and cover completely with the mashed potatoes topping. 8. Bake (uncovered) for 10-15 mins. in the preheated oven at 250°C on convection mode at the lower rack or till golden brown.

I usually toss together just whatever and it comes out good. I use tomato or mushroom soup or ketchup for the glaze. I use oatmeal, rice, or bread for the binding. Sometimes its beef, sometimes beef, pork and veal or lamb. One of the best meatloafs I've ever made was called oriental. After mixing hamburger, oatmeal, eggs, herbs, you mix together 1 cup water, 1 cup of ketchup, half a cup of brown sugar, a tablespoon of prepared mustard, 1/2 cup of vinegar, and pour it over the loaf. You can adjust the ingredients for taste. Bake as usual about 350 for an hour or so. The liquid cooks into the meat and it's moist and yummy.

Bee's Sweet and Sour Meatloaf INGREDIENTS 2 tablespoons butter 1 onion, finely chopped 3 tablespoons honey 2 tablespoons ketchup 1 tablespoon soy sauce 1 tablespoon hot sauce 2 pounds ground beef Optional: 1/2 cup ketchup DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch baking pan. Melt the butter in a skillet over medium heat. Stir in the onion, honey, ketchup, soy sauce, and hot sauce. Cook and stir 5 minutes, until onion is tender. In a bowl, mix the onion mixture with the ground beef. Transfer to the prepared baking dish. Top with ketchup if desired. Bake 1 hour in the preheated oven, or to an internal temperature of 165 degrees F (70 degrees C).

I don't mind meatloaf once in awhile, I'm not crazy over it though. I love bacon and mushrooms, so this sounds like a good recipe: Bacon & Mushroom Meatloaf 12 ounces bacon, diced 4 medium white mushrooms, chopped 1 small onion, finely chopped 1 1/2 lbs. extra lean ground beef 1 egg 1/4 cup evaporated milk or half & half 6 ounces shredded swiss cheese 1/2 cup corn flake crumbs Preheat oven to 350 degrees. In a large skillet, cook bacon until crisp but not burned. Remove with a slotted spoon to paper towels to drain and cool. Remove all but a tablespoon of the bacon fat from the skillet and sauté the mushrooms and onions until tender. Allow to cool slightly. In a large bowl, mix the beef, egg, and milk. Add the mushroom/onion mixture, all but a few spoonfuls of the swiss cheese and all but one tablespoons of the bacon bits. Add the corn flake crumbs and mix well until blended. Shape into a loaf and place in a large loaf pan. Bake at 350 for about an hour, or until cooked through. Drain fat from the pan and sprinkle the reserved cheese and bacon on top. Bake an additional 5 minutes, or until cheese is bubbly. Allow to rest for 10 minutes before slicing. Yield: 4 to 6 servings. Source: http://joycesfinecooking.com/Recipes2/baconmeatloaf.htm

That sounds yummy. I'd get rid of the shrooms. BTW... I noticed there are no eggs in this one!!!!! I made mine last night with no eggs... came out ok. A little too tight for me but okay.

I use a meatloaf recipe. I am not a fan of meatloaf, so for the first 5 1/2 years that my husband and I were married I refused to make it! I have found the perfect recipe though. I will share it for those who want to try it. Easy Pleasing Meatloaf 2 egg, beaten 2 pounds lean ground beef 1 package (6 ounce) Stove Top Stuffing Mix for Chicken 1 cup water 1/2 cup Barbecue Sauce, Divided Preheat oven is 375 degrees F. In a small bowl, beat eggs lightly with fork. This make it easy to incoroparte them into the meat mixture, so you don't have to overmix. Place lean ground beef, stuffing mix, water, beaten eggs, and 1/4 cup barbaecue sauce in large bowl. Mix all ingredients with a wooden spoon until just blended. Shape meat mixture into an oval in a 13x9 inch baking dish. Using a large baking dish makes it easier to pour out and discard excss fat. Top meatloaf with remaining 1/4 cup barbecue sauce. Bake 1 hour or until cooked through (center should reach 160 degrees F).

I just start tossing in stuff as I go. Like the other night I made one I tossed in chopped onions,fritos,grated cheese and 1 egg. Mixed it up put it in a pan and baked it. When was almost done poured salsa over the top...was yummy

I don't really like meatloaf. I did find a recipe on www.cooks.com that was decent though. You top it with cheddar cheese soup. It's pretty good - gives it more flavor!

I use about a pound of ground beef, oatmeal, 1 egg and 1/2 cup of milk. Then for the sauce, I use ketchup, a little mustard and brown sugar. I don't even know the measures cause I have made it so much I know about how much goes in.

meat loaf - recipes for this meat dish can vary and the results end up similar
We toss together a couple of pounds of ground beef, 2 eggs, some bread crumbs, all the garlic we like, a splash of milk and a handful of parsely. Do not handle it too much since that will make it too firm when it is down, ours holds together til you get it onto your plate then you can eat it with a fork. No ketchup or tomato sauce either. I mix in a certain bowl and bake it in a certain pan too.

Well for myself I take the following and mix it all with the meat: wistershire sauce (spelling sorry) BBQ sauce chopped onion Oatmeal Egg Garlic Parsley Paparika I mix this all by hand and then put it into the pan. I then coat the top of it with BBQ sauce. I bake at 350 for an hour and find it comes out very tender.

I usually just mince up the left over meat from Sunday dinner, mostly roast beef. My son loves BBQ sauce, so this is what I use, as he is the only one who likes meat loaf.
