I always say "God Bless You" or "Bless You" when someone sneezes. It's just always been done, and who knows why?
I found some interesting reading about this on Snopes:

There are many superstitions as to the origin of this practice, and the article was actually interesting to read.

I just say Bless you. If it is my niece and nephew I say Bless you and cover your mouth when you sneeze :)

Whenever someone sneezes I say "bless you." When I know I won't offend anyone I will say "God Bless You." It's only polite to say bless you or whatever else people say.
