INGREDIENTS for CARROt CAKE:
1 pound carrots
2 cups white sugar
1 (8 ounce) can crushed pineapple with juice
3/4 cup vegetable oil
1/2 cup unsweetened applesauce
4 eggs
1 tablespoon vanilla extract
1/2 cup flaked coconut
1/2 cup chopped walnuts
1/2 cup raisins
1 1/2 tablespoons pumpkin pie spice
2 teaspoons baking soda
1 teaspoon salt
3 cups all-purpose flour
1 (8 ounce) package cream cheese
3 tablespoons unsalted butter, softened
1 1/2 cups confectioners' sugar
1 1/2 teaspoons orange zest
1 tablespoon fresh orange juice
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Coat Bundt pan with vegetable oil spray. Flour pan and tap out excess flour.
In a medium bowl, sift together flour, salt, soda and pumpkin pie spice. Set aside. In a separate bowl, combine coconut, walnuts and raisins. Set aside.
Grate carrots (to make 3 cups). Set aside.
In a large bowl, combine sugar, pineapple with juice, oil and applesauce. Beat on high speed for 3 minutes. Beat in eggs one at a time. Add vanilla and carrots.
Add flour mixture and beat on low speed until combined. Add coconut, walnuts and raisins and combine.
Put batter into 10 inch Bundt pan. Bake at 350 degrees F (175 degrees C) for 60 to 70 minutes, or until toothpick inserted into center of cake comes out clean. Cool in pan on wire rack. Invert onto serving plate. Frost, and refrigerate one hour.
To make the frosting: In a large bowl, combine cream cheese, butter, confectioners sugar, orange zest and juice. Beat until smooth.

I included a recipe below for you in-case you are still interested in making carrot cake.. It is rather easy to make, & hopefully if you end up making this you will end up enjoying it as much as we have in our house.
It's best served with butter I have found. Especially if you serve it fresh right out of the oven with butter on top.. It's rather delicious! ENJOY!

"Carrot Cake."
Ingredients are as follows:
- 2 cups of sugar
- 1 teaspoon of cinnamon
- 2 cups of flour
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- 1 teaspoon of baking powder
- 1 cup of oil
- 4 eggs
- 3 cups of finely shredded carrots
- 3/4 cups of chopped walnuts (optional though)
Also if you are wanting to serve your carrot bread with icing I included the recipe below for that as well. You don't have to put icing though. Like I had stated above you can just serve it with some butter over top of your carrot bread. It's all up to you & whatever you may desire or prefer.
Icing ingredients if desired:
- 3 1/2-4 cups cups of powdered sugar
- 2 teaspoons of vanilla
- 1/2-1 cup of margarine
- 1 (8 ounce) package of cream cheese
Directions are as follows:
- First mix the dry cake ingredients all together.
- Then add the carrots, the oil, & then the eggs.
- Stir until all is wet.
- Then add the nuts if desired (optional though.) Then put in a greased & floured 9x13 inch pan.
- Then bake at 325 degrees F. For roughly 50 - 55 minutes.
- Then allow to cool.
- Then cream together the cream cheese, the margarine, the vanilla. And then add the powdered sugar.
- Then spread this icing over the cooled cake. Then serve, as well as ENJOY! xx
