1. That person should be hygeinic and take bath everyday. 2. He should wear headgears, apton and handgloves. 3. He should be cleanshaven. 4. He should know the proportions for mixing wheatflour and other ingredients 5. He should be trained professionally to handle the machines and gadgets. Recently in my sister's bakery, some employee kept her hand in the slicing machine and got her fingers cut. 6. He should have some basic knowledge of electricity, if the oven is run by electric power. 7. He should be trained in baking - regarding timing - how long the loves should be in the oven - how long the biscuits should be in the oven.

I think Shhh has pretty much covered it in good detail, in England you're often required to have passed the Hygience exam, which I've never gone into detail about though I think I myself may have passed that at school.

sure wish my husband was home right now, he is a QA and safety coordinator and use to work in a big bakery he could tell you everything (sorry I'm no help)
