Can God create a rock so heavy he would be unable to lift it?

I'm just trying to point out a potential problem:
-If he can create a rock he can't lift, there is something he is unable to do, which means he is not omnipotent.
-If he cannot create that rock, then there is something he is unable to do, which means he is not omnipotent.
How does this affect our view of God as an omnipotent being?

It isn't a problem, really. It depends on what you think God is. My view of Him is that he is not only the Creator of everything but is also immanent in everything He creates. In other words, he is the energy that is the stuff of existence as well as being the intelligence that is its designer and origin.
If you believe that, then the question is so ludicrous as to make one laugh (and I have encountered God's sense of humour enough to know that He laughs with love, as a parent does at a silliness or a spark of wisdom that a child utters!)
I believe that God has arranged His creation such that He is omnipotent but, because He gave us free will, not omniscient.
