I wanted to do those suggestions above. But what I was able to do was the simplest one. I gave her money for her to buy stuffs for her alone. I actually accompanied her doing the shopping. We had a real bonding! Thank you guys for your time to suggest, really, THANKS! We really enjoyed the whole day together!

I raised my 3 as a single mom. While I love any and every gift I receive from them, I think last Christmas was my favorite.
As they were growing up money was tight and shopping "just for me" is something that happened VERY RARELY. I learned to make do with what I had so I could buy for the kids. After years of that I still have that mentality, even though my kids are grown now.
Lasy year the 3 of them got together and bought me a gift card for my favorite store (Kohls in my case), and gave it me along with a "contract" I had to sign agreeing to use it to purchase only items for myself!
I loved that!

I also have a single mother that I really, really love! Be sure to always tell her that you love her and let her feel that. Why not try a ring as a gift since you've just mentioned that she's a single mom!

have you tried to have a vacation with her? spending time with just the two of you. Somwhere the two of you have never been. both of you will explore together. Hope this can help! Such a good son!
