I take 3 or 4 chicken breasts or mixed chicken breasts and thighs
I mix up a tomato marinara sauce (although you can use spaghetti sauce)
and I boil two 1 lb bags of pasta.(any type of pasta you like bowties, macaroni, etc.) I usually use two or three kinds or the multicolored varieties.
Also boil a mix of vegetables or you can simply use cooked spinach it is delicious
Grate on Lb. of parmesean or mozzarella cheese (you can also use a mix of both)
In a large casserole dish:
Layer chicken and noodles and vegetables with a layer of the marinara sauce interspersed(pour some of your marinara sauce on each completed stack of three layers).
Atop each layer of marinara sauce layer your cheese and one whole clove of garlic (half a clove for each layer.)
Save at the last of the marinara sauce and the last of the cheese for the very top. If using spinach it should be your last layer. Overlay with a layer of mushrooms. Shitake mushrooms work well as well as brown or white mushrooms.
Top with the last of your cheese.
Place in oven at 325 degrees for 50 minutes to one hour.
Allow to cool for 10-15 minutes then serve.
Will serve up to 8-12 people depending on portion size. If you are not feeding that large a group (for me it is just me and my fiancee' occassionally I will make this for a dinner party of 4-6 but there's always leftovers.)
This recipe freezes well. You can place it in Glad or any type of plastic lidded container and freeze it for months. Makes a great quick lunch or snack at work.
