Why don't magnets work on some stainless steels?

If you really want an answer you need to learn more about magnetic properties of metals and alloy. There are 3 kinds of materials- diamagnetic,paramagnetic and ferro magnetic. Read more about them to know.

My guess is that it might not actually be stainless steel. Maybe it is a different kind of metal with a stainless steel coating.
