I recently have rediscovered my love for sweet potatoes and yams. I have been making low fat fries with them. You lightly coat in olive oil, garlic and salt then you cook them in the oven for 45 minutes at 400. i sometimes precook in the microwave in order to soften them up before i bake them or cut them up. this cuts down on the cooking time. they are so delicious and relatively healthy. I also like to dip them in low fat sour cream. Does anyone have any other ways they like to cook them?

I normally make them like a baked potato, but I should really try your fry recipe. Thanks so much for posting this! Sweet potatoes are really good for you. Here is some nutritional information: 4 ounces of cooked pulp contains 2 grams protein 3.4 grams fiber 24.6 mgs Vitamin C 28 mgs calcium 22.6 mcgs folic acid 20 mgs magnesium 348 mgs potassium 21822 IU Vitamin A

Another benefit of yams and sweet potatos are they are both anti-inflammatories. I've had a condition called "Vascular Thoracic Outlet Syndrome" for 12 years involving muscle inflammation, and I EAT my anti-inflammatories as much as possible! I'm also post menopausal ~ and there's phytoestrogens in both. I EAT my phytoestrogens also, and don't use HRT (hormone replacement therapy).

Thanks for the nutrional info, great to know. I've heard that sweet potatoes are especially good for women, something to do with estrogen. i will look in to it. if the fries aren't crispy when you take them out of the oven, i sometimes just put them in the frying pan for a few minutes. why does crispy taste that little bit better? :) I'm totally craving them now, i think i will make them for dinner.

Yeah i've tried them with ketchup and it just didn't taste quite right to me. if your fries aren't crispy enough when they come out of the oven, put them in a frying pan for a few minutes. Hope they turn out and you enjoy them. Thanks for your response

Southern style is deep fried not oven fried. Cut thin like potato chips. Make sure the oil is hot before you add the yams or sweet potatos. Fry like hash browns or french fries. Eaten like french fries. Cook them crispy golden brown on the outside and they'll be sweet and tender on the inside. They're good. If you fry them, use a healthy oil.

I have often thought about cooking sweet potato instead of ordinary potato as I have read it is better for you, I am such a lover of the plain old potato though I wonder if it tastes much different.

I know yams are good for you but I just cannot eat them. I gag everytime I try. Sounds like an interesting way to cook them though.

I really love sweet potatos. I have been looking for some new recipes and ways to prepare them. Thanks for this discussion! I like to take the potato and slice it crosswise into 1/2 inch thick slices. The slices are then placed on a baking sheet that has been spritzed w/ pam or such. I lightly spritz the slices too..so that my spices will cling. I sprnkle the slices with cinnamon, nutmeg, all-spice and just a tad of splenda. Bake at 250 for 35-40 minutes. YUM!!!

I add sliced apples with the yams or sweet potatos, sprinkle lightly with cinnamin and clove, real butter (sparingly), cover, and bake in a medium oven until soft and cooked well through. I slice everything kind of thin. I like to take the cover off at the end so the top is cooked golden.

Sweet potatoes and yams are not all that easy to find in the shops here in the UK ... I wish they were as I have enjoyed them on the odd occasions I have found them in the shops ... your ideas have been noted ready for my next sweet potato

I love them as fries, but I admit we usually make them the mega-fattening way, baked with butter and brown sugar. I love to eat them like that as something different to have for breakfast every once in a while.

I like yams too. They are more versatile than folks think. i baked them and then scrape and mash, adding a tablespoon of brown sugar, a tablespoon of sour cream and some raisins. Yummy.

Hi. Thanks for responding to my love of Bryce Courtenay. I've read every book he has ever written. My next favourite is "Matthew Flinders Cat". Set in Australia - but people remain the same wherever they are! Anyrate, onto sweet potatoes. I Stuff Them! When you grow them there is always so many I have to find different ways to cook them. Slice the SweetBuck in half lengthways. With spoon scoop out a middle section til it looks like a canoe. Fill with watever you wish. I usually do tomatoes, mushrooms, onion, garlic, ginger - mix together with the pulp from sweetbuck and restuff. Put in oven (about 180degrees)until soft. Yum yum!
