I'm always looking for new ideas of things to cook. I absolutely love trying new dishes, so much i was in Culinary School (although i still need to go back and complete it). I thought i would see what some people favorite dishes are and we can put up the recipe etc.. let's all share our yummiest recipes. :) One of my favorites is Mango Chutney Chicken and Tropical Couscous. The chicken is easy, just dice up some chicekn breast, saute until done in olive oil and some garlic (to your taste) and then add a far of Hot mango Chutney, you can add some carrots or whatever other veggies you like to it, it's yummy yummy. The other.. Tropical Couscous is pretty easy just a bit more time consuming. :) 2 1/4 cups fresh squeezed orange juice 1 teaspoon ground cumin 1 (10ounce) box couscous 2 tablespoons olive oil 2 tablespoons soy sauce (low sodium) 2 tablespoons fresh lime juice 1/4 cup chopped cilantro 2 tablespoons chopped fresh basil 2 tablespoons chopped fresh chives 1 teaspoon grated fresh ginger 1 mango, peeled, pitted, and chopped 1 orange, peeled, and chopped 1/4 cup pine nuts, toasted Bring the OJ and Cumin to a boil, add couscous, cover and remove from heat for 5 minutes. :) In another dish combine oil, soy sauce and lime. (i absolutely recommend Golden Mountain soy sauce, asian food supply stores have it, the flavor it amazing). Add to the cous cous and mix it all together in a large bowl. Add in the cilantro, basil, chives, ginger, mango, and orange and gently mix it all together. Sprinkle the nuts on top and it's done. Those go SOOOO good together.. So tell me yours. :)
