Have you ever took the time to read the ingredients in commercial mixes? I can't even pronounce some of that stuff! If I cant pronounce it, should I be eating it? I have found that I can make my own homemade mixes that are frugal, ecomomical and taste better than commercial. I do this on a regualar basis and have done it for years. I just make them in bulk and store them in an airtight container. They also make great gifts. This particular recipe is for an all purpose cake mix. It is to be used just like you would a commercially prepared cake mix. You can use this basic mix to make many different kinds of cakes including but not limited to Lemon Pound Cake, Yellow Cake, White Cake, Spumoni cake. The possibliities are endless. If you would like a copy of any of my recipes just post a comment in the comment area and i will post it as soon as I can. 10 cups all purpose flour 6 1/4 cups sugar 1 cup cornstartch 5 Tablespoons Baking Powder 1 Tablespoon salt 2 12 cups vegetable shortening Combine and sift flour , sugar, cornstarch, baking powder and salt. Sifting is very important,Do not skip this part of the recipe. I mix all my mixes with my kitchenaid stand mixer but you can do it anyway that is convient for you. Use a pastry blender or heavy duty mixer to blend in shortening until mixture resembles cornmeal in texture. Spoon into a 20 cup container with an airtight seal. Store in a cool dry place. Do not store close to stove. Use within 10-12 weeks. Makes about 17 cups of All Purpose Cake Mix.

Thanks for the recipe, I don't understand about how much shortening, you wrote 2 12 cups of veg. shortening. Did you have a typo? Was it 2 1/2 cups.

Yes, I hate having to type from my files. It would be so much easier If I could copy and paste. I have all my recipes in my files on my computer and on CD to use if my computer would crash. I am so sorry. 2 1/2 cups of shortening Please forgive me for the typo

that looks overly complicated. A cake is the easiest thing in the world. All you need is 200g Self raising flour, 200g Caster Sugar, 200g Butter, 4 eggs. Mix it all together then if you want a different flavour just add chcolate for a chocolate cake, lemon for a lemon cake (you get where i'm going with this)

It does look complicated! But, but it might not be once you have read it all completley and comprehend it all. You might even have to start making it to find that it is not that complicated!! But, I must admit that making Cakes out of the boxes are just as fun and tastes just as great. And, sometimes it is even cheaper in the long run! :DD

I have heard about doing this. It definitely sounds like it would be healthier. I did do this with cookie dough once. I can't even remember where I got the recipe, but for Christmas one year, I made one big batch of starter for the cookies, then kept it in an air tight container. I made a ton of cookies from that starter just by adding other ingredients to it. We don't bake cakes that often, so I don't know if this would be worth it for me though since it has to be used within 10-12 weeks.

this is great. Please post a couple of the cake recipes that you use. I will have to pull out my cookbook (can't think of the name at the moment) it is the one that you take a cake mix as the starter and make all sorts of goodies. this would be a much healthier starter.

Great recipe! I think that I might have to try this. Because it starts out with a lot of flour and sugar...then it winds up to be a lot more than in the beginning! Thanks for the recipe! With endless idea to make cake!! :D

Thanks for the wondeful recipe. It can be so hard sometimes to find the time to whip up a cake from scratch. Boxed cake mixes just aren't as good. If I use your recipe, I should be able to make up a homemade cake whenever my family requests one.
