Well it's because they have an element called CHLOROPLAST aka Chlorophyll .THis is a must for the phenomenon called Photo-Synthesis which thus enables the plants to make their food. The colour of this Chloroplast is green and that's why the leaves are green.

Leaves - Beautiful soothing green leaves.
Leaves are green because that's how God made them and science discovered that the green or chlorophyll is necessary in photosynthesis to produce substances needed.

Leaves - Leaves partly eaten or with defect.
The green coloring is necessary for the production of food for the plants which our eyes also enjoy looking at for it's cool and refreshes the eyes.
