Left over turkey

Well I finally did it. I cooked a turkey over the holidays. I have never done this in my 37 yrs, simply because I have never liked the way turkey tasted when someone prepared it for me. But My husband and I smoked one for new year's dinner, and it was wonderful. The thing is, so much of it was left over because not knowing how it would turn out, we also prepared other meats. Now we have a freezer full of turkey. As I said before this is my 1st and I have no idea what to do with it besides make sandwiches. And frankly, if I see one more turkey sandwich I may just die..lol
So I appeal to all of the MyLot members to give me some ideas on what to do with it. Please do not say throw it out as I do not beleive in wasting anything exspecially food.

Hope these help. I got them from my mother in law.
Chow mein
1 tsp salt
1/4 tsp pepper
3 cups celery
1 can bean sprouts
1 can chinese Veggie's
2 Cups chicken Broth
3 Tbsp Cornstarch
1/4 cup cold water
1/4 cup soy sauce
2 cups turkey
I slice the celery and simmer it in the broth for 20 min to soften it up. Then add everything else. I mix the cornstarch, water and soy sauce in a coffee mug and pour in to the pot after I bring it to a boil. Then I serve it with rice and chow mein noodles.
Pot Pie
2 Cups gravy (if you have some left over use it)
2 Cups diced Potatoes
1 Cups diced Carrots
1 Cup turkey
top with pie crust. I use store bought because I have never had luck with making my own.
cover with tin foil for the 1st half or so of baking so the crust doesn't burn.
If your using fresh veggies it can take some time to sofen the veggie's. I bake it in the oven at 400 for up to 2 hours or until veggies are soft.

Basically any recipe that calls for chicken you can substitute turkey for. Also, things like Tuna Helper, instead of tuna use Turkey. It tastes really good that way. We also use it with chicken and tuna but turkey can work in it just as easily. It's a very flexible meat.
If you want to try and make soup the easiest way is to pick up a soup starter kit at the store. It has directions right on it on how to cook everything and anything else you might want to buy to add to it.

Simple dishes. Mixed turkey in with a sauce and have turkey and pasta.
Turkey sloppy joes are great.
Variant on sandwiches is to bake a turkey and cheese with red peppers or pickles or onions or combined withthousand island dressing wraped in a dinner biscuit dough or a rye dough.
