Inconsiderate bosses chap my hide!

I do freelance work for a small, family owned company. I am making a publication for them and was asked to get a printing quote from our usual printer. He graciously gave us a huge discount because we do so much work with them. I was excited because I scored the deal and thought the company would be thrilled with the savings. Now, my boss (not really my boss but the person who gives me the work) just emailed me and said she is going with a different printing company. I'm sure she expects me to be the one to tell our usual printers that we're going with someone else. I don't want to burn any bridges with this printer and I don't want to look like the schmuck here. If it were up to me, we'd keep the good relationship we have with our usual printer. She is doing this kind of thing to me all the time--changing her mind after I've already done the leg-work, and making me look like a heel. If I could afford to, I'd cut my losses and quit. But that's not an option, for reasons I won't go into right now. Why do people do this? I've never been a boss, but if I were one, I don't think I could do that to my employees or consultants. What's the matter with people??
