Quick, Easy, Healthy

When I am home by myself I find it hard to make lunch. I just don't like cooking for myself so I sometimes skip lunch and then cook dinner for me and my husband. I'm trying to eat better and not skip meals. What can I have for lunch that is quick, easy, and healthy?

i work from home so i have the same situation, i notmally just eat a lean pocket which are not too bad for ya, or i like the south beach lunchable things like the wraps they have, you could do ur own version of them, like get the precook chicken strips that perdue has, a little shredded low fat cheese, tortillas and low fat ceasar dressing and make a low fat wrap out of it.

There are lots of things you can do to make a quick lunch. The first would be a quick salad, where you can add some fruits of your choice - like pineapple, apple, grapes, olives, or pomegranate and mango - to a green leafy vegetable, like lettuce. You may also want to try yoghurt instead of mayonnaise as it cuts down on fats. Alternatively, you can make sandwhiches by blending chicken or turkey meat with celery,and pepper,and garnish with tomaoto and onion, preferable with wheat or rye bread for a heartier meal. If you still feel hungry you may want to stick to something like spaghetti, noodles, or chinese fried rice, which you can improvise to make your own ingredients or leftovers.
