Spinach

I bought some fresh spinach because it is healthy. lol..now what do I do with it? I've been eating it with oil/vinegar, and boiled eggs. Getting tired of that.

YOu can use it in lots of italian -like dishes. Names with "florentine" in them neams "with spinach", I think....LOL I like to have spinach with eggs if the eggs are cooked with a bit of olive oil and garlic ... scrambled or poached. It also works well in lasagnas and other pastas with a creamy sauce.

Wilted Spinach SUBMITTED BY: KNIVES0UT1979 "Delicious wilted spinach with a simple Mediterranean dressing." INGREDIENTS 1/4 cup extra virgin olive oil 2 tablespoons balsamic vinegar 1 teaspoon lemon juice 1 tablespoon bottled minced garlic 1 pinch sea salt 1 pinch ground black pepper 4 ounces baby spinach 1 1/2 tablespoons pine nuts DIRECTIONS In a bowl, mix the olive oil, vinegar, lemon juice, garlic, salt, and pepper. Place the spinach over boiling water in a pot fitted with a steamer basket, and steam 2 to 3 minutes, until wilted but not soggy. Toss spinach in a bowl with the dressing, and sprinkle with pine nuts to serve. In a bowl, mix the soup, milk, jalapeno peppers, salt, and pepper. Melt the butter in a large skillet over medium-low heat, and cook the onion until tender. Mix in the cooked rice and spinach. Bake 25 minutes in the preheated oven, until bubbly and lightly browned.

Steam it, and mix it with olive oil and balsamic vinegar. Or, steam it and use it with fat free butter spray. You can put some fresh garlic minced into it also. You can layer mashed potatoes or use a boat of a potatoe, and top with spinch.

hmmm well i love it too...heres a yummy recipe of my own must try it its cheezy spinach 1-1st of all boil spinach in milk (ya seriously) 2-then blend the mixture well 3-now heat oil n put in a shredded onion, cook until pink 4-now add 1tsp of cumin seeds n 1 tsp of turmeric poeder n stir for 2minutes 5-add spinach n stir well 6-cover for 4-5minutes over low flame 7- when the oil comes above the spinach level add as much of creme cheeze u wish n stir continuously. 8-stir so much tht there are 2 colors seen ie dark green light reen (coz of cheez mixture) 9- add salt if u feel taste lacks it NOTE: taste to cofirm the salty tatse coz spinach is salty itself enjoy its really awesom!

If you like spinach you have to try this. Heat pan on Medium High, add the following: 2 tbs. butter 2 tbs. olive oil Mix in: 1 full bunch of Spinach 2 cups of chicken(boiled and chopped) 5 bacon strips or 1/2 cup of bacon bits Cook constantly stirring until spinach is cooked. It is delicious. Top with american or cheddar cheese, and a sour cream. Enjoy!!

Larger flatter fresher pieces can be used a small wraps.. To wrap food you eat. Chop into very very fine slices and put it into any pasta or dish... or butter your sandwhich and sprinkle the pieces on there... Add it as a topping to any meat... Is different simple things to do. - DNatureofDTrain

Toss it with some sliced strawberries, craisins and raspberry vinaigrette for a really great salad. Maybe more of a summer dish, but sooo yummy!

I normally stir fry my spinach : 500 g Spinach 2 slices Ginger root, peeled 3 tablespoons Oil 1 teaspoon Salt 1 teaspoon Sugar 1 tablespoon Light soy sauce Method : Wash the spinach. Discard any discolored leaves. Cut the peeled ginger root into small pieces. Heat the oil in a hot wok until it smokes and swirl it to cover most of the surface. Add the ginger root pieces to flavor the oil. Add the greens, stir for about 1 minute and then add the salt and sugar. Continue stirring for another minute or so. Pour in the soy sauce and cook for a little longer. Serve hot.
