I have to interject that pasta itself comes in endless forms, which I would consider separate from each other. There is already a thread on bruschetta, which I love to use for an Italian snack plate of tapenade, olives, cheese, etc. Seafood is common in many parts of the country and are prepared in various different ways. I'm a little confused by the question, because you can safely assume that there are lots of other foods. Are you taking a poll over how many people know about Italian food and how to make it, or do you want to know how to make other Italian foods? Either way, visit www.italianfoodforever.com for some great recipes. Olio Santo is good (olive oil flavored with pepperoncini). Polenta is Italian, although for some reason I have seen people consider it a pasta. Pancetta is famous, although as a vegetarian I have never tried it. I know how to make anything Italian - if not, there are recipes galore. The next thing I'm going to try is making my own pesto. All-time favorite is lasagna.
