RICOTTA CHEESECAKE - Uses boxed cake mix

What a nummy recipe this one is. Easy to make too. It uses a boxed yellow cake mix.
INGREDIENTS
1 box yellow cake mix ¾ cup sugar
3 lbs ricotta cheese cinnamon sugar mixture about ¼ cup
8 eggs cherry or blueberry pie filling
3 teaspoons vanilla
DIRECTIONS: Grease and flour bottom of 15x12 pan. Preheat oven to 350 degrees. Mix cake mix as directed, pour into pan and level out. Mix well together ricotta cheese, eggs, vanilla and sugar. Pour directly into center of cake batter. Do not spread. Bake 45 minutes, take out of oven and sprinkle generously with cinnamon sugar mixture. Return to oven for ½ hour more. Cool and refrigerate. Serve with pie filling or strawberries and cream. Can use 2 small pans.

Butterfly, Now this one I will reply to! The ones about pumpkin and bread pudding I would have had nothing kind to say about as these are not even close to my favorite foods - but this - OH MY GODDESS! I will be making it - 3 pounds of cheese sounds like a lot; but who cares. Thank you ~Donna

I love ricotta cheese. I have yet to try this recipe myself. Many of the recipes I post are from the recipes of a dear friend. She is no longer with us, but her recipes go on.
