Any interesting substitutions or tips for cooking?

Here are some things I substitute when I don't have the right stuff in my cupboards. Please add your tips and substitutions. In a cake mix you can substitute mayonnaise for the oil. It doesn't affect the taste. It will be very moist. Instead of raisins, use chopped dates or even M&Ms. In salad dressing try lemon juice or lime juice instead of vinegar. Instead of vanilla try almond extract for an interesting flavor change. Use all egg whites instead of whole eggs for lower cholesterol in any recipe.

My gram used to actually make a mayonnaise cake!!! I loved it because it was the most moist chocolate cake you would ever eat! Almond extract in place of vanilla, very big difference.. just so you know! LOL And don't forget the applesauce instead of oil trick too!

I know almond changes the taste, but it's very interesting. It's so good in chocolate things instead of vanilla. Oh ya, applesauce instead of oil, I forgot.
