RECIPE: Budgetville Meat Loaf

Serves 6 2/3 cup Carnation nonfat dry milk powder 3/4 cup water 2 tsp dried parsley flakes 1 tsp Lemon juice 2 tbsp dried onion flakes 1 tsp prepared mustard 1/8 tsp dried minced garlic 16 oz ground lean turkey or beef 1/2 cup plus 1 tbsp dried fine bread crumbs Preheat oven 350 deg F. Spray a 9 x 5 inch loaf pan with butter flavored cooking spray. In a large bowl, combine dry milk powder, water, parley flakes, lemon juice, onion flakes, mustard, garlic. Add meat and bread crumbs. Mix well to combine. Pat mixture into prepared pan. Bake for 1 hour. Place pan on a wire rack and let set for 5 minutes. Cut into 6 servings. I enjoy a good meatloaf every now and then. So this is why I posted this to give others an idea of something to fix when they're hungry.

I have never seen a meatloaf recipe that used powdered milk or lemon juice. It sounds good. Thanks for sharing this recipe. And thanks to sunsix for those extras.

Chili Meatloaf and Potatoe Bake Serves: 6 Ingredients: 1 1/2 lb. ground turkey (or ground beef) 3/4 cup salsa fresca 1 tbsp. chili powder 1 egg, beaten 1 1/3 cups FRENCH'S® Cheddar or Original French Fried Onions 1/2 tsp. salt 1/3 tsp. ground black pepper 2 cups prepared hot IDAHOAN®Mashed Potatoes 2 cups shredded Mexican cheese blend Directions: HEAT oven to 375ºF. Mix turkey, salsa, chili powder, egg, 2/3 cup French Fried Onions, salt and pepper until blended. Press turkey mixture into a 9-inch square baking dish. BAKE 25 minutes until done and juices run clear. Drain off fat. COMBINE potatoes with 1 cup cheese. Spread evenly over meatloaf. Sprinkle with remaining cheese and onions. Bake 5 minutes until cheese melts and onions are golden. TIP: French’s® Cheddar French Fried Onions add an exciting cheesy crunch to ground turkey (beef).

Whoooo-eeee I love good meat loaf. That is one of the fond memories I have from being a kid. My foster mom could cook. We lived on a farm and had our own beef, pork and chickens. Lots of meat and I loved all of it. Back then every thing we ate was fatty and probably didn't help my health any, but it was the best. Now I have eat sensibly to survive but meat loaf is still on the menu. Now you have my mouth watering. Thanks I love good memories.
