flourless peanut butter cookies!

1 egg beaten
1 cup of sugar
1 cup of peanut butter
In large bowl,mix all ingredients together. scoop level tblsp and roll into balls.Place on ungreased cookie sheet and flatten with fork. Bake at 350 degrees for 18 minutes or until lightly browned.

I used to be a tupperware lady and we gave this recipe out as a quick and easy ONE DISH recipe using the smaller measuring thing, I think it was 1 qt. We would pack the one cup of peanut butter in first and level it off, then add the one cup of sugar on top of that, making it level at 2 cup mark and then add the egg on top of that and stir it up and bake it. You only have to dirty the one thing and no mess! That is what makes this the best cookie recipe ever! Thanks for reminding me, think I'll make them tonight!

This is great! My mom and I used to make a recipe similar to this when I was a small child. I have wondered where teh recipe disappeared to. I have tried to recreate and haven't been able to get it quite right! I am so excited...will try these this week.
