How to Can?

My husband wants me to learn how to can, he plans on starting a garden and he said that he would help me, we got some books. In the books I can't find anything in there about making homemade spagetti sauces, or canning meats. Can this be done, will it spoil, how long does it last. Does anyone know or Can anyone suggest a book that has it in it?

You can do both. Spagetti sauce is easy. I do it every year with a regular hot bath. Only with out the meat. You can do meat in a presure cooker. My grandma used to all the time. I myself dont like using them, so i freeze what ever meat i have to. There are some great resp. out there for spagetti sauce. I found 2 that we really like.

Thats Great, I have never used a presure cooker, I think we have one though. For the spagetti sauce can you put anything it, besides meat of course, I mean like onions and green peppers, will that be ok?

Yea, i add all that. the only thing i dont put is the meat.

I wouldn't chance canning meat. it goes bad so quickly and is deadly without even having an off colour or odor! For spaghetti sauce, I just treat it like tomatoes, but put about 1/4 inch of olive oil on top before the lid ofthejar goes on. Just use your favourite meatless recipe and proceed like it was canned tomatoes. you can always add cooked ground meator meatballs when you are warming the sauce right before serving.

Wow, Thanks for the suggestions, I am glad to know that I can do the spagetti sauce. I wish that I could do the meats though it would be great for having when the Hurricanes hit. Thanks for the Advice

hi, I am a studen tof my mothers, have been for 4 years now on learning how to cann.Look for kerr canning books.Kerr as in the canning jars.I have some books.Email me and I will try to look through them to find what you want.I'll scan and attach them to a email to you.I just learned this summer how to can soup beans.I love it, now all I have to do is open a jar and add some water and salt ,pepper, and in 10 minutes to 15 they are done and ready.NO SOAKING!Love it.And tomatoe juice is so easy and the kids love to help me with it.Though they run when I have to work in the corn.Too itchy they say!LOL,can't win them all.
