Anzac Biscuit - Anzac Biscuits

Traditional biscuits baked by anxious wives and mothers during World War I, packed in food parcels, and sent to the Australian soldiers in the trenches.
 
INGREDIENTS 
1 cup rolled oats
3/4 cup desiccated coconut
1 cup plain flour
1 cup sugar
125g (4oz) butter
2 tablespoons golden syrup
1/2 teaspoon bicarbonate of soda
1 tablespoon water

Preheat oven to 300F (150C)

Mix oats, flour, sugar and coconut together.
Melt syrup and butter together.
Mix soda with boiling water and add to melted butter and syrup.
Add to dry ingredients.
Place 1 tablespoonfuls of mixture on greased tray (allow room for spreading).
Bake for 20 minutes.
Loosen while warm, cool on trays.
(makes about 35)

ANZAC Biscuits ( cookies ) were named after the Australian and New Zealand Army Corps - famous for their bravery in the First World War... Anzac Biscuits Makes about 25 1 cup plain flour 1 cup rolled oats 3/4 cup desiccated coconut 3/4 cup castor sugar 125 grams butter 1 tablespoon Golden Syrup or light molasses 1 1/2 teaspoons bicarbonate of soda 2 tablespoons boiling water Preheat oven to slow 150 degrees Celsius. Brush 2 oven trays with melted butter or oil. Place oats, flour, coconut and sugar in a large mixing bowl; stir until combined. Combine butter and Golden Syrup in small pan; stir over high heat until melted. Mix soda with boiling water, add to melted butter and syrup then add to flour mixture. Stir until combined. Shape level tablespoons, full of mixture into balls and flatten slightly; place onto prepared trays, about 6 centimetres apart. Bake 15 - 20 minutes or until crisp and golden. Remove from oven, stand 2 minutes. Loosen biscuits and cool on wire rack.

ANZAC Biscuits with Almonds INGREDIENTS * 2 cups quick cooking oats * 1 3/4 cups all-purpose flour * 1/2 cup sliced almonds * 1 cup white sugar * 1 cup melted butter * 1 teaspoon baking soda * 2 tablespoons golden syrup * 2 tablespoons boiling water DIRECTIONS 1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. 2. In a medium bowl, stir together the rolled oats, flour, almonds and sugar. In a small saucepan over medium heat, melt butter. When butter has melted, remove from heat and stir in baking soda, golden syrup and boiling water. Stir the warm mixture into the dry ingredients and mix well. Roll the dough into walnut sized balls. Place the cookies 2 inches apart onto the cookie sheet and flatten slightly. 3. Bake in the preheated oven 15 to 18 minutes, until golden. Remove from baking sheets to cool on wire racks. ================================================================== Anzac Biscuits with Macadamia Nuts INGREDIENTS * 3/4 cup all-purpose flour * 1 1/2 cups rolled oats * 3/4 cup white sugar * 1/2 cup flaked coconut * 1/2 cup chopped and toasted macadamia nuts * 2 tablespoons water * 1 tablespoon honey * 1 teaspoon baking soda * 1/2 cup butter DIRECTIONS 1. Preheat oven to 325 degrees F (165 degrees C). Line baking sheets with parchment paper. 2. In a medium bowl, combine the flour, rolled oats, sugar, coconut and macadamia nuts. In a small saucepan, combine the water, honey and baking soda. Bring to a boil, then stir in the butter. Set aside to cool for 5 minutes, then stir into the flour mixture with a wooden spoon. Place tablespoons of dough onto the prepared cookie sheets and flatten slightly with the back of the spoon. Leave about 3 centimeters between cookies. 3. Bake for 12 minutes for chewy biscuits, 15 minutes for crunchy, in the preheated oven. Remove from the baking sheet to cool on wire racks. Happy cooking!!!!!!!!!

Thanks for the recipes, school starts here in Western Australia tomorrow so I was going to bake some bisuits tonight. And as I found some lonely slivered almonds last night Im going to try out your Anzac and Almonds recipe. Thankyou heaps they both look like lovely alternatives to the original
