Homemade Mixes - Oat Pecan Cookie Mix

Everyone loves cookies of one kind or another. The tick is the find that special kind that is perfect for your family. I cant understand why anyone would purchase commercial cookie mixes when they are so easy to make. The key is to make enough so you are not tempted to go to the market and pick up a mix in a box. These can be stored in tupperware containers or ziploc bags. They can be made as gifts or to add to your pantry. I have a tupperware container that works great. I keep a supply of the homemade mix ready to go on those times that you want to make them quickly. Enjoy.
Oat Pecan Cookie Mix
1 cup all-purpose flour
1/2 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup packed brown sugar
3/4 cup old-fashioned oats
1/2 cup chopped pecans
1 cup crisp rice cereal
Additional Ingredients:
1/2 cup butter softened
1 egg
1 teaspoon vanilla extract
In a bowl, combine the flour, sugar, baking soda and
powder. In a 1-quart glass container, layer the flour
mixture, brown sugar, oats, pecans and rice cereal,
packing well between each layer. Put in airtight container and store in a cool dry place up to 6 months. Yield: 1 batch about
4 cups total)

Attach the following label to the container.
To prepare cookies: In a mixing bowl, cream the butter.
Beat in egg and vanilla. Add the cookie mix and mix well.
Drop by rounded teaspoonfuls 2 inches apart on greased
baking sheets. Bake at 350 for 8-10 minutes or until golden
brown. Cool for a few minutes before removing from pans
to wire racks.
Yields about 3 dozen.
