6 large skinless chicken 1/2 cup cornmeal 2 cups buttermilk 1 tsp salt 4 tbsp melted butter 2 tsp paprika 1/2 cup flour 1 tsp garlic Soak chicken in milk in a large bowl.Cover with plastic wrap and chill for 30 minutes. spray a large baking dish or sheet with nonstick cooking spray.set aside. preheat oven to 400 degrees. Brush the butter over the bottom of baking dish. mix flour, cornmeal,salt,paprika,and garlic together in a large zipper-style plastic bag. add one milk-soaked piece of chicken to the seasoned flour and shake well. place the chicken in the baking dish and repeat with remaining chicken. bake for 10 minutes then turn over bake and additional 10 minutes or untill cooked through.

Buttermilk Fried Chicken =========================== INGREDIENTS: 2 (2 1/2 - 3 pounds) fryers 1 quart buttermilk 2 cups flour 2 teaspoons salt 1/2 teaspoon blackpepper (freshly ground is best) 1 teaspoon paprika optiona;" 1/2 teaspoon cayenne pepper vegetable oil or shourtening for frying DIRECTIONS: Wash chickens and cut into serving pices. Put the pieces in alarge bowl. Pour the buttermilk over the chicken pices, turning chicken so all is coated. Cover and refrigerate for 2 -3 hours. Combine flour and seasoning in a large brown paper grocery bag (or plastic bag). Heat about 1/2 inch oil or shortening in 1 or 2 heavy skillets over medium heat. Take chicken pieces out of buttermilk and allow excess to drip back into bowl. Put a few pieces in the bag with flour and shake to coat evenly. Put pieces in skillet(s), donot crowd. Cook until well browned, turning several times. Lower heat, cover skillet(s) and cook for 10 minutes. Uncover and cook 10 minutes more. Remove from skillet and drain on paper towels. If necessary, add more oil and continue until all of chicken is cooked. Discard uttermilk. (this makes a wonderful crispy-tender chicken. If you want gravy, drain off all but about 3 tablespoons of oil, leaving all the browned bits from chicken. Stir in 3 tablespoons flour and stir oven medium heat until flour is browned. Stir in 2 cups milk, cook and stir until thickened. Season to taste with salt and pepper.

you know im really going to give this recipe a try this is not the first time i seen a recipe with buttermilk chicken i also saw the recipe on food network but they fried it instead but i think this is better than oil.sounds good to me thanks
