Cast Iron Cooking?

Does anybody else cook with cast iron? For many years, I cooked in aluminum and stainless steel pots and pans. One day I pulled out an old cast iron skillet that my mother had given me. I cooked dinner in it, and immediately knew why my version of her recipes had never tasted as good as hers. I'm convinced it was the cast iron pot. What is it about cast iron that makes foods have a better flavor? Does anyone else still use cast iron?

I use cast iron cookware whenever at all possible, and I am absolutely hooked on them! They make food taste so much better! I can't see myself going back to stainless steel or Teflon nonstick stuff anytime soon.

I just bought a 3-quart cast iron pot with a lid that also can be used as a skillet. I am right now heating spaghetti noodles in it. I got it today at WalMart. I have, I think, entirely Cast Logic brand cast iron skillets in my house, not including a few small skillets that someone gave me.

I have used cast iron all my life. It has that "Grandma" taste when food is prepared in it. There are certian foods that should not be prepared in cast iron as the cast iron absorbs the flavors. These foods include Ramps, Alot of garlic and a few other strong tasting foods. The key to cooking in cast iron is to keep it seasoned good. I just did a discussion on how to do this properly. Once you use cast iron, you will never return to aluminum again.

I used to use cast iron in my other house, we heated with a coal stove, early in the morning, I would throw soup or stew or anything that was like a crockpot recipe and cook it on the stove. I was told the reason why food is so flavorful in cast iron is that the cast iron is so porous and it absorbs the flavor from every food you have ever cooked in it.

I love the flavor that cast iron gives food. I use the set of cast iron skillets that my parents gave to me, that was given to them as a wedding present. I refuse to buy new cast iron as these are perfectly seasoned.

I use mine here and there - my absolute favorite thing to make in it is strip steak. It makes the steak so juicy! Basically, it's just a sear on each side of the steak and then into a 350 degree oven for about 8 minutes - delicious!
