When I used to go to a lot of potlucks, I took pies. Everyone was crazy about them, and I never had any leftovers to take home. I can also recommend a casserole I tried from Rachael Ray's website. It's a vegetable lasagne made with cheese ravioli. I've made it for my son (a vegetarian) and my husband several times, and they both ask for more. My husband is not a vegetarian, but he said he might turn into one if he could eat like that all the time. It's really not too difficult. If you're interested message me and I'll write it out for you.

Hi, Sweetlady! :)
The easiest foods to prepare and bring to a potluck party is, of course, salads and dipping sauces with different kinds breads, cheeses and a tray of sliced veggies and fruits of different kinds, it's also wise to see if you can determine "Who likes what" if possible...
These are usually colorful and easy to carry and set-up in an attractive and appetizing manner.
Be sure to bring your favorites, too! :)
Have an excellent time at your party! :)

Why not try something in a crock pot, you can take it there to be warm in the crockpot while guests help themselves. Or some sort of stuffed bread sliced neatly. Suppose you have done a vegetable platter before. Or try deviled eggs. My favorite. Would also depend on if it is a church function or what. Hope you find something that will impress the guests!

Something in crock pot is a good idea. I never tried it in a pot luck party. It's not for church function, just a gettogether in friend's home.

Then you could get with your hostess and plan around her menu if she/he has one. Beans are great, shredded beef or chicken, possibly a dessert! Hope it goes well for you and your friends.

Mac n cheese with chunks of ham in it. That sounds like a good one to me. I normally take bean dip, but there is always someone else with that as well.

I have a couple of different dishes I like to take to pot lucks but my spagetti casserolle is always a hit and very easy to create.
Cook your spagetti on the stove top and heat the oven for use once the spagetti is done.
Take a pot large enough to hold the dish. I use a chicken roasting pot and can get enough for 8 or 10 small servings.
Cover the bottom of the roaster with cooked tomatoes and then put the already cooked spagetti on top of the tomatoes.
Now cover it all with milk and then cover the top with as much cheese as you would like.
Put the lid on and pot it in the oven until it is all up to temperature and then for the last few minutes take the lid off and put the broiler on until the cheese is a dark as you like.
This is a dish that people will try to lick the pot so watch them closely.

Well I have to show my ignorance here - I don't know what a "pot luck" party is. Guess it is another of those US expressions that us Brits are ignorant of! But if I have to prepare food for anything (we often have buffets at work for peoples' birthdays for example, where everyone brings food) then I usually prepare a few different types of salad.

Deviled eggs. They are always a crowd pleaser. No matter the type of people you are feeding, deviled eggs are always a popular choice.
