Here's a breakfast scramble that even your pickiest eaters will enjoy. The secret to these yummy eggs is to add the salsa and cheese before the eggs are set. This ensures that every bite is as flavorful as the first. Calling all cowpokes -- saddle up and move out -- breakfast is served! Ingredients 2 oz. liquid egg whites 1 Tbsp. low-sodium salsa 1/2 oz. low-fat or nonfat shredded cheese Directions Coat a nonstick skillet with cooking spray. Heat on medium high. When hot, add liquid egg with cheese and salsa. Scramble until no longer runny. Makes one serving. Nutritional values per serving: 410 calories, 7g fat (3.0g sat), 31g protein, 58g carbohydrate, 8g fiber, 15mg cholesterol, 810mg sodium and 29g sugar.
