Cooking an Imbolc feast!

Does anyone have any recipes for a good Imbolc supper? I'm having very special company for dinner/Imbolc ritual tonight and would like to make an Esbat-appropriate dinner. For non-pagans, do you have a special dinner recipe for the Feast of St. Brigid or even for Groundhog Day?
